Kat’s Kitchen: Delicious, Healthy, and Easy Frozen Yogurt :)

So My Big Sis is home from college and our favorite thing to do is eat. Being athletes, we are always hungry and in search for the best healthy alternatives to our favorite recipes.

We both LOVE froyo (frozen yogurt — for those who are not hipster enough to understand this term) and after years of trial and error we have finally found the perfect recipe, and it just so happened to be the easiest and lowest cal. one to date.

 We found this recipe on http://www.foodandwine.com and added a few touches, it is so easy and soo good! don’t hesitate to try it.

Here is our wonderful experience, enjoy!!!

All you need: 3 egg whites, 3 cups nonfat plain yogurt, 1/2 cup sugar

    In a medium bowl, using a handheld electric mixer, beat the egg whites until frothy.

slowly add in the sugar

beat until the egg whites are stiff little peaks

Ok so in another bowl, you whisk the yogurt until smooth, then slowly fold in the egg whites.

Then you wait…                           Ours took about 12 minutes, but it felt like 12 hours!

Then you put a generous scoop into a martini glass, slice up peaches from your orchard in the backyard and enjoy while watching the sunset from your porch… well thats what we would suggest anyways 🙂

How to Have a Successful Grad Trip to Maui

Step 7: Drive to Hana (be wary if you get easily carsick), take pictures of the pretty drive up there (if you do get carsick, have someone else do this part for you), and make the hike all the way up to the big waterfall

Just Jo in the Kitchen: Peanut Butter Oreo Brownies (a.k.a. Heaven)

So I realize I’ve been promising cookie recipes for a while, and while these aren’t exactly cookies, they will blow your mind with their deliciousness. But first, a quick anecdote.

For my whole life, I have been an Oreo HATER. I literally despised them. They seemed like they should be so good, but then you take a bite, and the cookies are too dry and the white stuff (what is that, even?) did hardly anything to help it’s aridity. And so often, I found myself somewhere where people had food, and the dessert/snack they brought that EVERYONE loved, was Oreo’s. Always Oreos. One day, I was at a retreat with my school, and all us girls were hanging out, eating junk, when lo-and-behold, there came the Oreos. Again. But all of a sudden, someone smart (actually brilliant, if you ask me) pulled out a tub of peanut butter. “What’s that for?” I asked. “Why the Oreos of course!” She may or may not have said those exact words, I can’t remember, but it’s all the same to me. Nonetheless, I was shocked. Peanut butter and Oreos? Who would’ve thought! I was told I just had to try them, so, deciding to be brave and give them a shot, I took a bite and fell instantly in love. And from that day on, I still hate Oreos, but with peanut butter??? Now THAT I will eat.

So what does all of this have to do with anything you ask? Well, shortly after discovering this amazing combination, I discovered this wonderful recipe for Peanut Butter Oreo Brownies.

It even sounds amazing, I know. Since this original discovery, I have made these several times, and each time when I give any away, I get request after request to make them again.

I found this recipe on  lifeallover.com. So no, I am not the mastermind behind it (although I think they got it from another blog too), just the loving consumer.

Here is my experience with them: Eat happy!

Stack the Oreos in twos.

LOAD them with peanut butter. I mean, fill them up, ALL THE WAY. You don’t understand, the more, the WAY better.

I used this delicious mix 🙂 I think me and Betty are starting to become good friends, we tend to hang out a lot.

Follow the directions to make the mix.

Peanut butter stuffed Oreos go into cupcake liners (very important).

Cover generously in brownie mix.

Bake at 350 for about 20 minutes. Because all ovens are different, please check frequently so you don’t burn them.

Motivational Monday #4: Life’s Simple Joys..

Thanksgiving is more than an action, it is a lifestyle. Everyone always says “Be thankful”, “Count your blessings”, “say thank you”, but have you ever really taken time to dwell on this concept? I hadn’t until last year when I read One Thousand Gifts :A Dare to LIVE FULLY Right where you are, by Ann Voskamp.

In this book, Anne seeks to find the meaning of full life and strives to learn how to embrace joy in the midst of chaos. She does this by taking on the challenge of writing down 1000 of her blessings in a journal. She finally finds the one thing she has been missing and her life is forever changed: thanksgiving. (This book was amazing and I definitely reccommend it!). This woman has so much joy by simply saying “thank you” to Jesus.

There was a certain measure of joy missing in my life and after reading this it was like the lightbulb went on. I tried to take on a form of Anne’s concept and write a blessing a day (blessings that I wrote ranged from “my lifelong friends” to “delicious sushi”–serious to silly).  This only lasted a few months, but I can honestly say those were some of the most joyful months of my life. I had no reason to complain when I saw how crazily blessed I was.

Now, whenever I find myself complaining or feeling sorry for myself (which happens far too often), I try to find that little box sitting on my dresser from over a year ago and I begin to read my blessings. Everytime I read one I can’t help but smile.

Thanksgiving is one of lifes greatest medicines. I am still no where close to where I should be when it comes to thanksgiving, but I have found that by appreciating life’s simple gifts I have more joy than I could have ever imagined.

Go find just one thing to be thankful for today, you won’t regret it!!

We’re Back!

Hey guys! We are soo soo soooo sorry for not posting anything recently! We came back from Spring Break and were practically bombarded with loads and loads of homework. So being our usual studious selves (yeah, right), we had to give some things up in order to get everything done. Below is a picture depicting my wonderous weekend (again, yeah, right) where I spent more hours at Starbucks (yummm) than at home, while I was trying to (start and) finish my 10 page Bible paper. And no, we will NOT be using this as inspiration for how you should spend your weekends, we promise.

Did I mention it was 10 pages? And that I used 27 sources? Yeah. Oh, and it was due today! Lovely, I know. I guess it’s my fault for waiting until the last minute to do it, but hey, why not? Here’s my motto when it comes to procrastination:

Wondrous Weekend #5: Hiking to the Top with a Flip and a Flop

Hey guys! Its just Jo here this week, Kat is still out of town. So, I therefore had to find someone else to join me in creating this weekends Wondrous Weekend. Guys, meet Kena.

It was a bit of a blustery day…

This is one of my bestest friends ever, and while we usually hang out at our local Starbucks (see Wondrous Weekend #3), this time we decided to hike up Mt. Rubidoux. I guess it’s not actually a hike, more like an uphilll walk on nicely paved road. If you haven’t ever done it, and you live in the Riverside, CA area, it’s a must do.

Kena and I enjoyed talking on the way up there, and once we got to the top we sat and talked even more, and even fit in some time to take some jumping pictures.

Jesus Calling Jo

Hey guys!

I don’t know if anyone has ever read any of the devotional book called “Jesus Calling” by Sarah Young, but if you haven’t, you should. They take about 5 minutes to read, making them the perfect thing to read in the morning for some inspiration, and they are written as if Jesus is talking to you. It’s truly quite amazing. However, with it being so amazing and all, I decided to make some personalized ones. I am by no means a professional at this, but I try to write what about what I’m learning/struggling with that day, and also include references within them to verses that I feel work really well with the topic. Below I have included one that I have made, and I hope that it is able to encourage you today.
